THE MASTERS PIMENTO CHEESE SANDWICH RECIPE

If you are from the south, you know that not only is this Spring Break Week, it's also the 85th Masters Tournament Week at the Augusta National Golf Club. This is Georgia's equivalent of the Kentucky Derby. The event is steeped in tradition, the tickets are hard to come by and it's the ultimate place to see and be seen in the south.  

Along with watching the very best golfers compete on one of the most gorgeous, azalea ladened and challenging golf courses in America, there is another tradition passed by each generation to the next... eating the best Pimento Cheese Sandwich on the planet!

If you are not one of the fortunate ticket holders this year, don't despair. The Junior League of Augusta has kindly provided the recipe in their book, Par 3 Tea-Time at the Masters.  Although your sandwich won't come in their signature green bag, one bite while watching the tournament on tv will immediately transport you to the gallery in Augusta! 

THE MASTERS PIMENTO CHEESE SANDWICH

3 cups shredded white cheddar cheese
2 cups shredded yellow sharp cheddar cheese
4 oz crumbled blue cheese
1 cup shredded Parmesan cheese
1 (4-oz) jar sliced pimentos, drained
1 cup light mayo
2 tbs Dijon mustard
1 loaf of white bread

Combine cheeses, pimentos, mayo and mustard in a food processor and process until smooth. Cover and chill. Spread on bread slices. Makes four sandwiches. 

It's also mandatory to wash it down with an "Arnold Palmer"... half sweet tea and half lemonade.
